Dad’s Potato Salad

3 pounds red potatoes (skins on) cubed to about ½-3/4 inch
Kosher salt
1 cup mayonnaise
½ cup sour cream
2 tablespoons Dijon mustard
1 Tablespoon of celery seed
Freshly ground black pepper
