I'm sure you can put the batter in mini-tins, etc. Obviously you will need to watch the timer though. Smaller tins will mean less baking time. I would check them after 20 minutes with a bamboo skewer or toothpick to be sure.

Hi,

I live in Florida and own a building on the dock in cedar key florida over the gulf of mexico. It has been a restaurant for 40 years. I am Greek and grew up in the business but alas am now a lawyer/stay at home mom of two.

the clam farmers in cedar key are the #1 producers in the nation yet 95% our clams are shipped out of state to NY and CA. I want to find someone that has the experience and the desire to open a waterfront clam bar just like the ones up north...HELP. The clams are in my backyard and can be brought in fresh daily off the boats to the restaurant. How beautiful is that?

This is a very good recipe. I'm not sure I would change much, except maybe sauteing the onion, celery, and garlic (and a chopped bell pepper) before adding it to the beans. A lot of recipes call for too much celery. You have the right amount. Thanks for posting this.

I happen to be a fan of the fries. But there is a secret to eating them.

You need to dump them out of the styrofoam cup immediately, and onto an opened up brown paper bag.

It accomplishes two things.
1) Prevents the fries from steaming in the cup and loosing their crisp exterior.
2) Allows some additional grease to be soaked up by the bag.

The downside to the technique is that the fries cool off faster. But it's a tradeoff I am willing to make.

Maybe sometime you give it a shot, and see if it improves anything.

I love the picture of the brown bag soaking through with grease. It makes me want to run out and get a bag of my own.
